Mom's Salsbury Steak
(from Dave & Pat's memory ... a sure-fire reciept)

28oz chopped tomatoes
1/2 green pepper
beef bullion
(brown in pan)
cubed steak (pounded flat)
Combine ingredients and bake in oven at 325 for several hours

Here is Mom's Swiss Steak of course it will not be just like hers because I could never get it like that.
Cube Steak or Round Steak or Lean Chuck Steak

Green Bell Peppers
Celery (opt)
Large can of whole or crushed tomatoes
Season flour well with salt and pepper, dredge steak in flour and brown on both sides.
Chop peppers, onions and celery.  In a baking dish put half of veggies and tomatoes in bottom of pan add meat and the other half of veggies and tomatoes on top.
Bake until meat is tender and enjoy.

 Let this set for awhile after baking and it will create a sauce, have some mashed potatoes ready. WoW!!  Diet the next day.

Chicken Tortilla Soup


2 tbsp olive or avocado oil
1 lb organic chicken breasts substitute 1 cup uncooked quinoa for vegetarian
2 10 oz cans tomatoes with roasted green chiles
1 15 oz can black beans drained
1 4 oz can diced green chiles
2 bell peppers diced
1 small jalapeno diced (optional)
1 small red onion finely diced (white onion works too)
2 zucchinis chopped
4 cups chicken broth or sub vegetable
1 tsp salt
2 tsp chili powder
1 tsp garlic powder
1 tsp black pepper
1 tsp cumin
1 tsp dried oregano
1 tsp paprika
1/2 cup coconut milk or half and half
2 limes juiced
1 cup tortilla chips


Greek yogurt or sour cream
Shredded Mexican Cheese
Tortilla chips a must

Nore about egg whites ... there are 3 ways to get whipped peaks:

1.  Use a copper bowl
2. Use "cream of Tarter" ... hard to get in US and VERY hard to get in Europe
3. Add a teaspoon of lemon juice to the egg whites before mixing.
